  • 4 cups Corn kernels fresh or frozen
  • 1 cup Mayonnaise
  • 1 cup Cotija cheese crumbled
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • 0.5 cup Cilantro chopped
  • 2 tablespoon Lime juice fresh
  • to taste Salt
  • to taste Pepper

Instructions 

  1. Heat a skillet over medium-high heat and add the corn kernels. Cook until slightly charred, about 5-7 minutes.
  2. In a mixing bowl, combine the charred corn, mayonnaise, Cotija cheese, chili powder, garlic powder, cilantro, and lime juice. Mix well.
  3. Season with salt and pepper to taste. Serve warm or at room temperature with tortilla chips.
