- 1 lb shrimp, cooked and peeled medium size
- 1 cup tomato juice
- ½ cup ketchup
- ¼ cup lime juice freshly squeezed
- 1 jalapeño, finely chopped
- ½ cup red onion, finely chopped
- 1 cup cucumber, diced
- 1 cup avocado, diced
- ¼ cup cilantro, chopped
- to taste salt and pepper
1. In a large mixing bowl, combine tomato juice, ketchup, and lime juice.
2. Add the chopped jalapeño, red onion, cucumber, avocado, and cilantro. Mix well.
3. Gently fold in the cooked shrimp. Season with salt and pepper to taste.
4. Chill in the refrigerator for at least 30 minutes before serving.
