Ingredients 

Main Ingredients

  • 2 cups Pasta cooked and cooled
  • 1 cup Black beans rinsed and drained
  • 1 cup Corn canned or fresh
  • 1 cup Cherry tomatoes halved
  • 1 cup Bell pepper diced
  • ¼ cup Red onion finely chopped
  • ¼ cup Cilantro chopped

Dressing

  • ¼ cup Olive oil
  • 2 tablespoon Lime juice freshly squeezed
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper to taste

Instructions 

  1. 1. Cook the pasta according to package instructions. Drain and let it cool.
  2. 2. In a large mixing bowl, combine the cooked pasta, black beans, corn, cherry tomatoes, bell pepper, red onion, and cilantro.
  3. 3. In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and black pepper.
  4. 4. Pour the dressing over the pasta salad and toss to combine.
  5. 5. Chill in the refrigerator for at least 30 minutes before serving.
