Ingredients 

Main Ingredients

  • 1 cup Shredded chicken
  • 1 cup Shredded cheese
  • 1 cup Corn kernels
  • 1 cup Black beans rinsed and drained
  • 1 cup Diced tomatoes
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 12 pieces Egg roll wrappers
  • 1 cup Oil for frying

Instructions 

  1. 1. In a mixing bowl, combine shredded chicken, cheese, corn, black beans, diced tomatoes, cumin, and chili powder.
  2. 2. Lay out an egg roll wrapper and place about 2 tablespoons of the mixture in the center. Fold the sides and roll up tightly. Repeat with remaining wrappers and filling.
  3. 3. Heat oil in a frying pan over medium heat. Fry the egg rolls until golden brown, about 2-3 minutes per side.
  4. 4. Remove and drain on paper towels. Serve hot with your favorite dipping sauce.
