Ingredients

  • 4 bell peppers tops cut off and seeds removed
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes halved
  • ½ cup crumbled feta cheese
  • ¼ cup chopped fresh parsley
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine cooked quinoa, cherry tomatoes, feta cheese, parsley, olive oil, oregano, salt, and pepper.
  3. Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
  4. Bake for 30 minutes or until the peppers are tender.
  5. Serve warm and enjoy!
