Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine cooked quinoa, cherry tomatoes, feta cheese, parsley, olive oil, oregano, salt, and pepper.
Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
Bake for 30 minutes or until the peppers are tender.
Serve warm and enjoy!
