Ingredients 

Salad Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cucumber diced
  • 1 red bell pepper diced
  • ½ cup red onion finely chopped
  • ¼ cup kalamata olives sliced
  • ¼ cup feta cheese crumbled

Dressing Ingredients

  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • 1 clove garlic minced
  • to taste salt and pepper

Instructions 

  1. 1. Cook quinoa: In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  2. 2. Prepare vegetables: While quinoa is cooking, dice cucumber, red bell pepper, and finely chop red onion.
  3. 3. Make dressing: In a small bowl, whisk together olive oil, lemon juice, dried oregano, minced garlic, salt, and pepper.
  4. 4. Combine: In a large mixing bowl, combine cooked quinoa, diced vegetables, sliced olives, and crumbled feta cheese. Pour dressing over salad and toss to combine.
  5. 5. Serve: Serve immediately or refrigerate for later. Enjoy!
