  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Olives sliced
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Dried Oregano
  • to taste Salt and Pepper

Instructions 

  1. 1. In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  2. 2. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
