Mango Coconut Chia Pudding
A refreshing and healthy pudding made with mango, coconut milk, and chia seeds.

- 1 cup Coconut Milk
- ½ cup Chia Seeds
- 1 cup Mango Puree fresh or canned
- 2 tablespoon Maple Syrup or honey
- 1 teaspoon Vanilla Extract
In a mixing bowl, whisk together the coconut milk, chia seeds, maple syrup, and vanilla extract.
Let the mixture sit for about 10 minutes, then whisk again to prevent clumping.
Cover the bowl and refrigerate for at least 4 hours or overnight.
Before serving, layer the chia pudding with mango puree in serving glasses.
Garnish with fresh mango slices if desired.
