Ingredients

  • 4 slices Bacon chopped
  • 2 cups Potatoes diced
  • 1 cup Cheddar Cheese shredded
  • 4 Eggs beaten
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 0.25 cup Green Onions chopped

Instructions 

  1. 1. Heat the skillet over medium heat and add the chopped bacon. Cook until crispy, then remove and set aside.
  2. 2. In the same skillet, add olive oil and diced potatoes. Cook until golden brown and tender.
  3. 3. Add the beaten eggs to the skillet and scramble until cooked through.
  4. 4. Mix in the cooked bacon, shredded cheddar cheese, salt, and black pepper. Stir until the cheese is melted.
  5. 5. Garnish with chopped green onions and serve hot.
