Ingredients 

Main Ingredients

  • 4 Russet potatoes medium-sized
  • 2 tablespoon Olive oil
  • 1 cup Shredded cheddar cheese
  • 4 slices Bacon cooked and crumbled
  • ½ cup Sour cream
  • 2 tablespoon Chives chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry potatoes. Rub with olive oil and place on a baking sheet. Bake for 45-50 minutes until tender.
  3. Let potatoes cool slightly. Cut in half lengthwise and scoop out most of the flesh, leaving a thin layer.
  4. Brush potato skins with olive oil and bake for another 10 minutes until crispy.
  5. Fill each skin with shredded cheese and crumbled bacon. Return to oven until cheese is melted, about 5 minutes.
  6. Top with sour cream and chopped chives. Serve immediately.
