Main Ingredients
- 1 cup lentils
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 bay leaf
- 6 cups vegetable broth
- to taste salt and pepper
- 2 tablespoon olive oil
Heat olive oil in a large pot over medium heat.
Add onions, carrots, and celery. Cook until softened, about 5 minutes.
Stir in garlic, cumin, and paprika. Cook for 1 minute.
Add lentils, bay leaf, and vegetable broth. Bring to a boil.
Reduce heat and simmer for 30-35 minutes, until lentils are tender.
Season with salt and pepper. Remove bay leaf before serving.
