Ingredients 

Main Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 bay leaf
  • 6 cups vegetable broth
  • to taste salt and pepper
  • 2 tablespoon olive oil

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in garlic, cumin, and paprika. Cook for 1 minute.
  4. Add lentils, bay leaf, and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 30-35 minutes, until lentils are tender.
  6. Season with salt and pepper. Remove bay leaf before serving.
