Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 2 cups water
  • ¼ cup olive oil
  • 2 lemons, juiced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped

Instructions 

  1. Rinse quinoa under cold water.
  2. In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. In a bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, and mint.
  5. Pour dressing over salad and toss to combine.
