Ingredients 

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • ¼ cup sugar
  • 1 pinch salt
  • 1 large egg yolk
  • 2-3 tablespoon ice water

Filling

  • 1 cup sugar
  • 2 tablespoon all-purpose flour
  • 3 large eggs
  • ½ cup lemon juice freshly squeezed
  • 1 tablespoon lemon zest
  • 1 cup blueberries fresh

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until it resembles coarse crumbs.
  3. Add egg yolk and ice water, mix until the dough comes together. Press into a tart pan.
  4. Bake the crust for 15 minutes. Let it cool.
  5. For the filling, whisk together sugar, flour, eggs, lemon juice, and lemon zest until smooth.
  6. Pour the filling into the cooled crust. Sprinkle blueberries on top.
  7. Bake for another 15 minutes or until the filling is set. Let it cool before serving.
