- 1.5 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 0.5 teaspoon salt
- 1 cup fresh blueberries
- 2 large eggs
- 0.5 cup milk
- 0.5 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
Preheat your oven to 350°F (175°C). Grease a loaf pan and set aside.
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, beat the eggs, then add the milk, oil, vanilla extract, and lemon zest. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the blueberries.
Pour the batter into the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
