Ingredients 

Crust

  • 1 cup unsalted butter softened
  • 2 cups all-purpose flour
  • ½ cup granulated sugar

Filling

  • 1 ½ cups granulated sugar
  • ¼ cup all-purpose flour
  • 4 large eggs
  • cup freshly squeezed lemon juice

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine softened butter, 2 cups of flour, and ½ cup of sugar. Mix until well combined.
  3. Press the mixture into the bottom of an ungreased 9x13 inch baking dish.
  4. Bake the crust for 15-20 minutes in the preheated oven, or until firm and golden.
  5. In another bowl, whisk together 1 ½ cups of sugar and ¼ cup of flour. Whisk in the eggs and lemon juice.
  6. Pour the lemon mixture over the baked crust.
  7. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool.
  8. Allow to cool completely before cutting into squares.
