Leftover Chicken Croquettes Recipe

Main Ingredients
- 2 cups leftover chicken, shredded
- 1 cup mashed potatoes
- 1 egg beaten
- ½ cup bread crumbs
- ¼ cup grated Parmesan cheese
- 1 tablespoon chopped parsley
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup flour for dredging
- ¼ cup vegetable oil for frying
1. In a mixing bowl, combine shredded chicken, mashed potatoes, beaten egg, bread crumbs, Parmesan cheese, parsley, salt, and pepper.
2. Shape the mixture into small patties.
3. Dredge each patty in flour, shaking off any excess.
4. Heat vegetable oil in a frying pan over medium heat.
5. Fry the patties until golden brown and crispy, about 3-4 minutes per side.
6. Drain on paper towels and serve hot.
