Ingredients 

Dough

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon active dry yeast
  • ¾ cup warm water
  • 1 tablespoon olive oil

Filling

  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 cup sulguni cheese, shredded (or substitute with more mozzarella)
  • 1 egg for egg wash

Instructions 

  1. 1. In a mixing bowl, combine flour, salt, sugar, and yeast.
  2. 2. Add warm water and olive oil, mix until a dough forms.
  3. 3. Knead the dough for about 10 minutes until smooth and elastic.
  4. 4. Place the dough in a lightly oiled bowl, cover, and let rise for 1 hour.
  5. 5. Preheat oven to 450°F (230°C).
  6. 6. Punch down the dough and divide it into two equal parts.
  7. 7. Roll each part into a 10-inch oval shape.
  8. 8. Mix all the cheeses together and divide the mixture between the two dough ovals, leaving a border around the edges.
  9. 9. Fold the edges of the dough over the cheese to form a boat shape.
  10. 10. Brush the edges with egg wash.
  11. 11. Bake for 15-20 minutes until golden brown and the cheese is bubbly.
