Main Ingredients
- 1 cup Saltfish soaked and flaked
- 1 cup All-purpose flour
- 1 teaspoon Baking powder
- 1 cup Water
- 1 small Onion finely chopped
- 1 small Scotch bonnet pepper finely chopped
- 1 teaspoon Thyme fresh, chopped
- 1 teaspoon Black pepper
- 1 cup Vegetable oil for frying
1. Soak the saltfish in water for a few hours or overnight to remove excess salt. Flake the fish into small pieces.
2. In a mixing bowl, combine flour and baking powder. Gradually add water and mix until smooth.
3. Add the flaked saltfish, chopped onion, scotch bonnet pepper, thyme, and black pepper to the batter. Mix well.
4. Heat the vegetable oil in a frying pan over medium heat. Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides.
5. Remove fritters from the oil and drain on paper towels. Serve hot.
