Ingredients

  • 2 cups Zucchini, grated
  • ½ cup All-purpose flour
  • ¼ cup Grated Parmesan cheese
  • 1 Egg beaten
  • 2 cloves Garlic minced
  • ¼ teaspoon Salt
  • ¼ teaspoon Black pepper
  • 2 tablespoon Olive oil for frying

Instructions 

  1. 1. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  2. 2. In a mixing bowl, combine grated zucchini, flour, Parmesan cheese, beaten egg, minced garlic, salt, and black pepper. Mix well.
  3. 3. Heat olive oil in a frying pan over medium heat.
  4. 4. Scoop spoonfuls of the zucchini mixture into the pan, flattening them slightly with a spatula. Cook for 2-3 minutes on each side until golden brown.
  5. 5. Remove fritters from the pan and place on a paper towel-lined plate to drain excess oil. Serve warm.
