1. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
2. In a mixing bowl, combine grated zucchini, flour, Parmesan cheese, beaten egg, minced garlic, salt, and black pepper. Mix well.
3. Heat olive oil in a frying pan over medium heat.
4. Scoop spoonfuls of the zucchini mixture into the pan, flattening them slightly with a spatula. Cook for 2-3 minutes on each side until golden brown.
5. Remove fritters from the pan and place on a paper towel-lined plate to drain excess oil. Serve warm.
