Meatballs
- 1 lb ground beef
- ½ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 egg beaten
- 2 cloves garlic minced
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
Soup
- 1 tablespoon olive oil
- 1 onion chopped
- 3 cloves garlic minced
- 8 cups chicken broth
- 1 cup small pasta like acini di pepe or orzo
- 5 oz baby spinach fresh
- ¼ cup grated Parmesan cheese for serving
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper. Mix well and form into small meatballs. Place on the baking sheet and bake for 15 minutes.
In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
Add chicken broth and bring to a boil. Add pasta and cook until al dente.
Add baked meatballs and spinach to the pot. Cook until spinach is wilted and meatballs are heated through.
Serve hot, topped with grated Parmesan cheese.
