Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 zucchini, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 1 can cannellini beans (15 oz), drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach, chopped
  • ¼ cup grated Parmesan cheese (optional)

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in garlic and zucchini. Cook for another 2 minutes.
  4. Add diced tomatoes, vegetable broth, and beans. Bring to a boil.
  5. Reduce heat and add oregano, basil, salt, and pepper. Simmer for 20 minutes.
  6. Stir in spinach and cook until wilted, about 2 minutes.
  7. Serve hot with grated Parmesan cheese on top if desired.
