Ingredients

  • 2 cups Cooked rice cooled
  • ½ cup Grated Parmesan cheese
  • ½ cup Mozzarella cheese cubed
  • 2 Eggs beaten
  • 1 cup Breadcrumbs
  • ½ teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 cups Vegetable oil for frying

Instructions 

  1. 1. In a large mixing bowl, combine the cooked rice, Parmesan cheese, beaten eggs, salt, and pepper.
  2. 2. Take a small amount of the rice mixture and flatten it in your hand. Place a cube of mozzarella in the center and shape the rice around it to form a ball.
  3. 3. Roll the rice ball in breadcrumbs until evenly coated. Repeat with the remaining rice mixture.
  4. 4. Heat the vegetable oil in a large frying pan over medium heat. Fry the rice balls in batches until golden brown and crispy, about 3-4 minutes per side.
  5. 5. Remove the rice balls with a slotted spoon and drain on paper towels. Serve hot.
