Irish Potato Farls Recipe

- 4 cups mashed potatoes
- 1 cup all-purpose flour
- 2 tablespoons butter melted
- 1 teaspoon salt
1. In a mixing bowl, combine the mashed potatoes, flour, melted butter, and salt. Mix until a dough forms.
2. Turn the dough out onto a floured surface and knead lightly. Roll out to about ½ inch thick.
3. Cut into quarters to form farls.
4. Heat a griddle over medium heat. Cook the farls for about 3-4 minutes on each side, until golden brown.
5. Serve warm with butter or as a side to your favorite breakfast.
