Ingredients

  • 3 lbs corned beef brisket
  • 4 cups water
  • 1 packet spice mix usually comes with the corned beef
  • 1 lb carrots peeled and cut into chunks
  • 1 head cabbage cut into wedges
  • 1 lb potatoes peeled and cut into chunks

Instructions 

  1. 1. Place the corned beef brisket, spice packet, and water in the Instant Pot.
  2. 2. Close the lid and set the valve to sealing. Cook on high pressure for 90 minutes.
  3. 3. Once the cooking time is complete, allow the pressure to release naturally for 15 minutes, then quick release any remaining pressure.
  4. 4. Remove the corned beef and set aside. Add the carrots, cabbage, and potatoes to the Instant Pot.
  5. 5. Close the lid and set the valve to sealing. Cook on high pressure for 3 minutes.
  6. 6. Quick release the pressure and serve the vegetables with the corned beef.
