Huevos Rancheros Recipe
A classic Mexican breakfast dish featuring eggs, tortillas, and a flavorful tomato sauce.

Main Ingredients
- 4 pcs Eggs
- 4 pcs Corn Tortillas
- 1 cup Tomato Sauce
- 1 pcs Onion, chopped
- 1 pcs Jalapeño, chopped
- 1 tablespoon Olive Oil
- to taste Salt and Pepper
- 1 cup Refried Beans
- 1 cup Cheese, shredded
- 1 pcs Avocado, sliced
Heat olive oil in a skillet over medium heat. Add chopped onion and jalapeño, cook until softened.
Add tomato sauce to the skillet, season with salt and pepper. Simmer for 5 minutes.
In another skillet, heat tortillas until slightly crispy. Set aside.
Fry eggs in the same skillet to your preferred doneness.
To assemble, place tortillas on plates, spread refried beans on top, add fried eggs, and spoon tomato sauce over the eggs. Sprinkle with shredded cheese and garnish with avocado slices.
