- 1 cup Carrots, sliced
- 1 cup Cauliflower florets
- 1 cup Celery, sliced
- 1 cup Red bell pepper, diced
- 2 cloves Garlic, minced
- 2 cups White vinegar
- 1 cup Water
- 2 tablespoon Kosher salt
- 1 tablespoon Sugar
- 1 teaspoon Red pepper flakes
1. In a large pot, bring vinegar, water, salt, sugar, and red pepper flakes to a boil.
2. Add carrots, cauliflower, celery, red bell pepper, and garlic. Boil for 2-3 minutes.
3. Remove from heat and let cool slightly.
4. Transfer vegetables and brine to jars, ensuring vegetables are submerged.
5. Seal jars and refrigerate for at least 24 hours before serving.
