Ingredients

  • 1 cup Carrots, sliced
  • 1 cup Cauliflower florets
  • 1 cup Celery, sliced
  • 1 cup Red bell pepper, diced
  • 2 cloves Garlic, minced
  • 2 cups White vinegar
  • 1 cup Water
  • 2 tablespoon Kosher salt
  • 1 tablespoon Sugar
  • 1 teaspoon Red pepper flakes

Instructions 

  1. 1. In a large pot, bring vinegar, water, salt, sugar, and red pepper flakes to a boil.
  2. 2. Add carrots, cauliflower, celery, red bell pepper, and garlic. Boil for 2-3 minutes.
  3. 3. Remove from heat and let cool slightly.
  4. 4. Transfer vegetables and brine to jars, ensuring vegetables are submerged.
  5. 5. Seal jars and refrigerate for at least 24 hours before serving.
