Main Ingredients
- 3 pieces Egg yolks
- 1 tablespoon Lemon juice freshly squeezed
- ½ cup Unsalted butter melted
- 1 pinch Cayenne pepper
- to taste Salt
1. In the top of a double boiler, whisk together egg yolks and lemon juice. Add melted butter, 1 tablespoon at a time, whisking constantly until the sauce is thickened. If the sauce gets too thick, whisk in a few drops of warm water before adding more butter.
2. Remove from heat, and whisk in cayenne pepper and salt.
