Ingredients

  • 1 lb Ground Beef
  • 6 Hatch Chilis, roasted and chopped
  • 1 cup Onion, diced
  • 3 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 2 cups Chicken Broth
  • 1 can Diced Tomatoes

Instructions 

  1. 1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. 2. Add the diced onion and minced garlic to the pot. Cook until the onion is translucent.
  3. 3. Stir in the chopped hatch chilis, cumin, and oregano. Cook for another 2-3 minutes.
  4. 4. Pour in the chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. 5. Season with salt and pepper to taste. Serve hot.
