  • 6 Hatch chiles roasted and peeled
  • 2 Tomatoes diced
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Lime juiced
  • 1 teaspoon Salt
  • ½ cup Cilantro chopped

Instructions 

  1. 1. Preheat your oven to 425°F (220°C).
  2. 2. Place Hatch chiles on a baking sheet and roast for 10-15 minutes, turning occasionally, until skins are blistered.
  3. 3. Remove chiles from oven and place in a bowl covered with a towel for 10 minutes to steam.
  4. 4. Peel the skins off the chiles, remove seeds, and chop.
  5. 5. In a blender, combine roasted chiles, tomatoes, onion, garlic, lime juice, and salt. Blend until smooth.
  6. 6. Stir in chopped cilantro. Adjust seasoning if needed.
  7. 7. Serve with tortilla chips or as a topping for your favorite dishes.
