Ham Bone and Vegetable Soup
A hearty soup made with leftover ham bone and fresh vegetables.

Main Ingredients
- 1 Ham bone
- 2 cups Diced carrots
- 2 cups Diced celery
- 1 cup Diced onion
- 3 cloves Garlic, minced
- 8 cups Chicken broth
- 2 cups Diced potatoes
- 1 teaspoon Dried thyme
- 1 teaspoon Dried parsley
- to taste Salt and pepper
1. In a large pot, combine the ham bone, carrots, celery, onion, and garlic.
2. Pour in the chicken broth and bring to a boil.
3. Reduce heat and simmer for 1.5 hours.
4. Add the potatoes, thyme, and parsley. Continue to simmer for another 30 minutes.
5. Remove the ham bone, cut off any remaining meat, and return the meat to the pot.
6. Season with salt and pepper to taste. Serve hot.
