Ingredients 

Main Ingredients

  • 1 cup Vegetable Oil
  • 1 cup All-purpose Flour
  • 1 large Onion, chopped
  • 1 large Bell Pepper, chopped
  • 2 stalks Celery, chopped
  • 3 cloves Garlic, minced
  • 1 pound Andouille Sausage, sliced
  • 1 pound Chicken Thighs, cut into pieces
  • 6 cups Chicken Broth
  • 2 cups Okra, sliced
  • 2 teaspoon Cajun Seasoning
  • 2 cups Cooked Rice for serving

Instructions 

  1. 1. Heat oil in a large pot over medium heat. Gradually whisk in flour to make a roux. Cook, stirring constantly, until the roux is a dark brown color.
  2. 2. Add the onion, bell pepper, celery, and garlic. Cook until vegetables are tender.
  3. 3. Stir in the sausage and chicken. Cook until the chicken is browned.
  4. 4. Gradually stir in the chicken broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
  5. 5. Add the okra and Cajun seasoning. Simmer for another 15 minutes.
  6. 6. Serve gumbo over cooked rice.
