Ingredients

  • 4 ears corn husked
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup cilantro chopped
  • 2 tablespoon olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Grill the corn for about 10 minutes, turning occasionally, until charred and cooked through.
  3. 3. Remove the corn from the grill and let it cool slightly. Cut the kernels off the cob and place them in a large mixing bowl.
  4. 4. Add the cherry tomatoes, cucumber, red onion, and cilantro to the bowl with the corn.
  5. 5. In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper.
  6. 6. Pour the dressing over the salad and toss to combine.
  7. 7. Serve immediately or refrigerate until ready to serve.
