Ingredients 

Chicken and Marinade

  • 4 pieces Chicken Breasts boneless, skinless
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground

Mango Salsa

  • 2 cups Mango diced
  • 1 cup Red Bell Pepper diced
  • 0.5 cup Red Onion diced
  • 1 tablespoon Lime Juice freshly squeezed
  • 2 tablespoon Cilantro chopped

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Brush the chicken breasts with olive oil and season with salt and pepper.
  3. 3. Grill the chicken for 6-7 minutes on each side, or until fully cooked.
  4. 4. While the chicken is grilling, combine the mango, red bell pepper, red onion, lime juice, and cilantro in a mixing bowl.
  5. 5. Serve the grilled chicken topped with mango salsa.
