Ingredients

  • 1 bunch asparagus trimmed
  • 2 tablespoon olive oil
  • 1 cup cherry tomatoes halved
  • ¼ cup feta cheese crumbled
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. Preheat your grill to medium-high heat.
  2. Toss the asparagus with 1 tablespoon of olive oil and a pinch of salt and pepper.
  3. Grill the asparagus for about 5-7 minutes, turning occasionally, until tender and slightly charred.
  4. In a mixing bowl, combine the grilled asparagus, cherry tomatoes, feta cheese, lemon juice, and the remaining olive oil. Toss gently to combine.
  5. Season with additional salt and pepper to taste. Serve immediately.
