Main Ingredients
- 2 lbs Beef chuck, cut into cubes
- 2 tablespoon Olive oil
- 1 Large onion, chopped
- 3 cloves Garlic, minced
- 1 cup Red wine
- 2 cups Beef broth
- 1 can Diced tomatoes (14.5 oz)
- 2 tablespoon Tomato paste
- 1 teaspoon Dried oregano
- 1 teaspoon Dried thyme
- 2 pcs Bay leaves
- to taste Salt and pepper
1. Heat olive oil in a large pot over medium-high heat. Add beef and brown on all sides.
2. Remove beef from pot and set aside. Add onion and garlic to the pot and sauté until softened.
3. Pour in red wine and scrape up any browned bits from the bottom of the pot.
4. Return beef to the pot. Add beef broth, diced tomatoes, tomato paste, oregano, thyme, bay leaves, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for about 2 hours, or until beef is tender.
6. Remove bay leaves before serving. Enjoy!
