Greek Lemon Chicken Soup

- 1 lb chicken breast boneless, skinless
- 6 cups chicken broth
- ½ cup rice uncooked
- 3 eggs
- 2 lemons juiced
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
1. In a large pot, bring the chicken broth to a boil.
2. Add the chicken breast and cook until done, about 15 minutes. Remove and shred the chicken.
3. Add the rice to the broth and cook until tender, about 15 minutes.
4. In a bowl, whisk together the eggs and lemon juice.
5. Slowly add a ladle of hot broth to the egg mixture, whisking constantly to temper the eggs.
6. Gradually add the egg mixture back into the pot, stirring constantly.
7. Return the shredded chicken to the pot and season with salt and pepper to taste.
8. Serve hot and enjoy!
