  • 1 lb shrimp peeled and deveined
  • 1 avocado sliced
  • 1 cup black beans rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 lime juiced
  • 2 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Instructions 

  1. 1. Cook the quinoa according to package instructions.
  2. 2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add shrimp, cumin, paprika, salt, and pepper. Cook until shrimp is pink and cooked through, about 3-4 minutes per side.
  3. 3. In a large mixing bowl, combine cooked quinoa, black beans, cherry tomatoes, and avocado.
  4. 4. Add cooked shrimp to the bowl. Drizzle with remaining olive oil and lime juice. Toss gently to combine.
