Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 1 cup Chopped Vegetables (carrots, bell peppers, cucumbers)
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa and a pinch of salt. Reduce heat to low, cover, and simmer for 15 minutes.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a mixing bowl, combine chopped vegetables, olive oil, salt, and pepper.
  5. 5. Serve quinoa in bowls and top with the vegetable mixture.
