Ingredients 

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold, cut into cubes
  • ¼ cup granulated sugar
  • 1 egg yolk
  • 2 tablespoon cold water

Filling

  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

Topping

  • 2 cups mixed fresh fruit sliced (strawberries, kiwi, blueberries, etc.)

Instructions 

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and sugar. Add cold butter and mix until the mixture resembles coarse crumbs.
  3. Add egg yolk and cold water. Mix until the dough comes together. Press the dough into a tart pan.
  4. Bake the crust for 15-20 minutes or until golden brown. Let it cool completely.
  5. In another bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Spread the cream mixture over the cooled crust.
  6. Arrange the sliced fresh fruit on top of the cream. Chill the tart for at least 1 hour before serving.
