- 2 medium Zucchini sliced into rounds
- 1 cup All-purpose flour
- 2 units Eggs beaten
- 1 cup Breadcrumbs
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
- 1 cup Vegetable oil for frying
1. Slice the zucchini into ¼-inch rounds.
2. In a bowl, mix flour, salt, and pepper.
3. Dip zucchini slices in flour mixture, then beaten eggs, and finally coat with breadcrumbs.
4. Heat oil in a frying pan over medium heat.
5. Fry zucchini slices until golden brown, about 2-3 minutes per side.
6. Remove and drain on paper towels. Serve warm.
