  • 2 medium Zucchini sliced into rounds
  • 1 cup All-purpose flour
  • 2 units Eggs beaten
  • 1 cup Breadcrumbs
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • 1 cup Vegetable oil for frying

Instructions 

  1. 1. Slice the zucchini into ¼-inch rounds.
  2. 2. In a bowl, mix flour, salt, and pepper.
  3. 3. Dip zucchini slices in flour mixture, then beaten eggs, and finally coat with breadcrumbs.
  4. 4. Heat oil in a frying pan over medium heat.
  5. 5. Fry zucchini slices until golden brown, about 2-3 minutes per side.
  6. 6. Remove and drain on paper towels. Serve warm.
