Ingredients 

Main Ingredients

  • 2 medium Eggplants sliced into ¼ inch rounds
  • 1 cup All-purpose flour
  • 2 units Eggs beaten
  • 1 cup Breadcrumbs
  • 1 cup Parmesan cheese grated
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 cup Vegetable oil for frying

Instructions 

  1. 1. Slice the eggplants into ¼ inch rounds and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
  2. 2. Pat the eggplant slices dry with paper towels.
  3. 3. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese.
  4. 4. Dredge each eggplant slice in flour, then dip in beaten eggs, and coat with the breadcrumb mixture.
  5. 5. Heat vegetable oil in a frying pan over medium heat. Fry the eggplant slices in batches until golden brown and crispy, about 2-3 minutes per side.
  6. 6. Remove the fried eggplant slices and place them on paper towels to drain excess oil. Serve hot.
