- 2 large cucumbers sliced
- 1 cup all-purpose flour
- 2 large eggs beaten
- 1 cup breadcrumbs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup vegetable oil for frying
1. Slice the cucumbers into ¼ inch thick rounds.
2. In a mixing bowl, whisk the eggs.
3. Place the flour, beaten eggs, and breadcrumbs in separate shallow dishes.
4. Season the cucumber slices with salt and pepper.
5. Dredge each cucumber slice in flour, then dip in beaten eggs, and coat with breadcrumbs.
6. Heat the vegetable oil in a frying pan over medium heat.
7. Fry the cucumber slices until golden brown, about 2-3 minutes per side.
8. Remove from the pan and drain on paper towels. Serve warm.
