- 1 can artichoke hearts drained and quartered
- 1 cup all-purpose flour
- 2 units eggs beaten
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 1 cup vegetable oil for frying
- to taste salt
- to taste black pepper
Heat the vegetable oil in a frying pan over medium heat.
In a mixing bowl, combine the flour, salt, and pepper.
Dip each artichoke heart quarter into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs mixed with Parmesan cheese.
Fry the coated artichoke hearts in the hot oil until golden brown, about 2-3 minutes per side.
Remove from the oil and drain on paper towels. Serve hot.
