  • 4 ears Corn Husked
  • 1 cup Cherry Tomatoes Diced
  • 1 Red Onion Diced
  • 1 Jalapeño Seeded and minced
  • ¼ cup Cilantro Chopped
  • 1 Lime Juiced
  • 1 teaspoon Salt

Instructions 

  1. Preheat your grill to medium-high heat.
  2. Grill the corn for about 10 minutes, turning occasionally, until charred and cooked through.
  3. Remove the corn from the grill and let it cool slightly. Cut the kernels off the cob and place them in a mixing bowl.
  4. Add the diced tomatoes, red onion, jalapeño, cilantro, lime juice, and salt to the bowl. Mix well.
  5. Serve immediately or refrigerate for later.
