Ingredients

  • 3 cups frozen hash brown potatoes
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup diced cooked ham
  • ¼ cup chopped green onions
  • 4 eggs beaten
  • 1 can evaporated milk 12 oz
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Grease a 2-quart baking dish.
  3. Layer the hash browns, cheese, ham, and green onions in the dish.
  4. In a mixing bowl, whisk together the eggs, evaporated milk, pepper, and salt.
  5. Pour the egg mixture over the layered ingredients in the dish.
  6. Bake for 50 minutes or until a knife inserted in the center comes out clean.
  7. Let stand for 5 minutes before serving.
