Ingredients 

Main Ingredients

  • 2 pieces chicken breasts sliced
  • 1 piece red bell pepper sliced
  • 1 piece green bell pepper sliced
  • 1 piece yellow onion sliced
  • 2 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 pieces large flour tortillas
  • 2 cups shredded cheese cheddar or Mexican blend
  • Optional toppings sour cream, guacamole, salsa

Instructions 

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until no longer pink.
  2. Add bell peppers and onion to the skillet. Cook until vegetables are tender.
  3. Season with chili powder, cumin, garlic powder, paprika, salt, and pepper. Stir well.
  4. Remove from heat and set aside.
  5. Heat another skillet over medium heat. Place one tortilla in the skillet.
  6. Sprinkle cheese evenly over the tortilla. Add a portion of the chicken and vegetable mixture on top of the cheese.
  7. Place another tortilla on top. Cook until the bottom tortilla is golden brown and the cheese is melted. Flip and cook the other side.
  8. Repeat with remaining tortillas and filling.
  9. Cut into wedges and serve with optional toppings.
