Ingredients 

Main Ingredients

  • 2 lbs Fish (like mackerel or tilapia)
  • 1 cup Vinegar
  • 1 cup Water
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 cup Carrots, julienned
  • 1 cup Bell peppers, sliced
  • 1 medium Onion, sliced
  • 3 cloves Garlic, minced
  • 1 piece Ginger, sliced

Instructions 

  1. 1. Clean and prepare the fish. Season with salt and set aside.
  2. 2. In a pan, heat oil and fry the fish until golden brown. Remove and set aside.
  3. 3. In the same pan, sauté garlic, ginger, and onions until fragrant.
  4. 4. Add the carrots and bell peppers. Cook for a few minutes until slightly tender.
  5. 5. Pour in the vinegar, water, sugar, and salt. Bring to a boil.
  6. 6. Add the fried fish back into the pan. Simmer for 10 minutes to allow the flavors to meld.
  7. 7. Serve hot with steamed rice.
