Empanadas Fritas de Queso

Ingredients 

Dough

  • 2 cups All-purpose flour
  • 1 teaspoon Salt
  • ½ cup Butter cold and diced
  • ½ cup Water cold

Filling

  • 1 cup Queso fresco crumbled
  • 1 cup Mozzarella cheese shredded
  • 1 tablespoon Fresh cilantro chopped

For frying

  • 2 cups Vegetable oil

Instructions 

  1. In a mixing bowl, combine flour and salt. Add cold, diced butter and mix until crumbly. Gradually add cold water and mix until dough forms. Wrap in plastic and refrigerate for 30 minutes.
  2. In another bowl, combine queso fresco, mozzarella, and cilantro. Set aside.
  3. Roll out dough on a floured surface to about ⅛ inch thick. Cut into circles using a round cutter.
  4. Place a spoonful of cheese mixture in the center of each circle. Fold dough over filling and seal edges with a fork.
  5. Heat oil in a frying pan over medium heat. Fry empanadas until golden brown, about 2-3 minutes per side. Drain on paper towels.
