Ingredients 

Main Ingredients

  • 2 large eggplants
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1 egg
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Slice eggplants lengthwise into ¼ inch thick slices. Brush with olive oil and season with salt and pepper.
  3. Grill or bake eggplant slices until tender, about 5 minutes per side.
  4. In a bowl, mix ricotta, Parmesan, egg, salt, and pepper.
  5. Spread a thin layer of marinara sauce in a baking dish.
  6. Place a spoonful of the ricotta mixture on each eggplant slice and roll up.
  7. Arrange rolls seam-side down in the baking dish.
  8. Top with remaining marinara sauce and sprinkle with mozzarella.
  9. Bake for 20-25 minutes until bubbly and golden.
