Eggplant Parmesan Recipe
A classic Italian dish with layers of breaded eggplant, marinara sauce, and melted cheese.

- 2 large eggplants sliced into ¼ inch rounds
- 2 cups breadcrumbs Italian seasoned
- 1 cup all-purpose flour
- 3 large eggs beaten
- 4 cups marinara sauce
- 2 cups mozzarella cheese shredded
- ½ cup Parmesan cheese grated
- ¼ cup olive oil for frying
Preheat oven to 375°F (190°C).
Set up a breading station with flour, beaten eggs, and breadcrumbs.
Dip eggplant slices in flour, then eggs, then breadcrumbs.
Heat olive oil in a frying pan and fry eggplant slices until golden brown.
Layer fried eggplant, marinara sauce, and cheeses in a baking dish.
Bake for 20-25 minutes until cheese is melted and bubbly.
Let cool for a few minutes before serving.
